And for mixologist, holistic nutritionist, and best-selling author, Jules Aaron, inspiration flows directly from nature and the local landscape. Sometime this year, a conversation began between Aaron and 1000 NORTH, one of South Florida’s premier waterfront restaurants offering modern American regional cuisine and stunning views of the Jupiter Lighthouse and Intracoastal Waterway in Jupiter, Florida. Their talk revealed that they shared a passion for celebrating the beautiful East Coast of Florida and its tropical flavors. “Partnering with the talented team at 1000 NORTH was the perfect way to bring this vision to life and share it with our community this summer,” explained Aaron.
1000 NORTH has a great story with sports giants as leading characters. Former New York Giants Tucker Frederickson and developer Ira Fenton came up with the idea. Through their connections in South Florida, they found other like-minded individuals, such as Bjarne Borg, NBA superstar Michael Jordan, Ernie Els, Bill Terlato, Morton Bouchard, Vincent Cerone, Russell and Lauren Fuchs, Raj Mantena, Stephen Mendell, Marvin Shanken, Rick Stoddard, Richard Rifkin, and Charles and Kathryn Theofilos, to form the perfect partnership team.
“We wanted to give guests something they can’t find in our area – an experience many people travel to Miami or New York to get. We’re bringing that to Jupiter, and topping it off with a beautiful waterfront view of the Jupiter Lighthouse. Those coming to 1000 NORTH can even arrive by boat if they prefer. Our 350-foot dock will be open to guests,” Fenton said in a press release.
A clear vision transforms ideas into actionable inspiration, and one can just imagine Aaron sitting at one of the tables in 1000 NORTH’s terrace and envisioning forming a partnership with this fine establishment. “I thought of a glow of dusk—that fleeting, magical moment when the sky fills with fiery pink and orange hues,” she said. And as she thought of people tasting 1000 Sunsets [the name of her new concoction], she could envision them saying, “It feels like summer in a glass!” But really, what she wanted them to notice about 1000 Sunsets is “the beautiful layered effect and feel inspired to slow down, connect, and savor the moment.”
There’s a sheen of truth here, because savoring the moment is all about mindful drinking—being fully present and aware when consuming alcohol. It’s no surprise that Women's Health Magazine calls Aaron “the wellness mixologist.” She thinks that’s endearing, because it aligns perfectly with her passion for mindful drinking.
“To me, being a wellness mixologist means focusing on quality, purpose, and balance. By choosing low-proof spirits and wholesome ingredients, I get to show people that we can celebrate and enjoy beautiful cocktails while still honoring our bodies and well-being,” she said.

Handcrafted with fresh mango puree from Red Splendor Farm, local hibiscus syrup, soda water, and Munyon’s Paw-Paw, a Floridian aperitif, the cocktail showcases the region’s best flavors.
If you would like to recreate this sunset magic at home, Aaron is willing to share the secret with you. “Shake the low-proof Munyons Paw Paw and fresh mango puree together, pour it over ice, top it with sparkling wine and water, and then float the hibiscus syrup at the very end using a bar spoon. It beautifully mirrors a real sunset,” she said.
